Written by Kenji Ujiie Born in Tokyo in 1968. Founder and owner chef of Ken's Cafe Tokyo. In 1998, Ken's Cafe Tokyo opened in front of Shinjuku Gyoen National Garden in Tokyo. He launched Japan's first gateau chocolat specialty store. Since 2015, he has been supervising sweets at FamilyMart, and is also in charge of developing "Ecuador Special," a chocolate made with high-quality cocoa beans from Ecuador. His books include "The reason why 3,000 yen gateau chocolat sells like hotcakes -- How to create a system that will sell even if the price is raised four times" (SB Creative, 2014) and "Don't do anything unnecessary! -- The amazing method of a chef who achieves an annual turnover of 300 million yen with gateau chocolat alone" (Shueisha, 2018). Yumiko Miura (Illustrations) Born in Kyoto City. Painter/illustrator.
